raspberry honey | mascarpone | heavy cream | strawberries | balsamic
for the drizzle:
Stir together equal amounts of balsamic & honey in a small saucepan. Cook over medium heat until it coats the back of a spoon, set aside.
Place mascarpone in a bowl stir in a bit of the cream to lighten, then fold in some of the honey…not to much, you just want to lightly sweeten it. Hull and slice the strawberries and toss with a bit of honey…just enough to make them shiny and start their juices flowing.
to serve:
Place a large spoon full of the mascarpone in a martini glass. top with some of the strawberries and drizzle with the honey-balsamic.
