This honey has a pleasant tart quality about it that makes it stand out from the rest.

Most people expect honey to be sweet, but this is Tart with a Smidgen of Sweet at the end. Delicious served with warm scones & butter.

It has just the right fruitiness for our pink grapefruit sorbet (Mimosa)! Or, for a simply
decadent dessert, try the honeyed mascarpone with fresh strawberries & balsamic drizzle ‘Beekeeper’s Tip’.

honeyed mascarpone w/ fresh strawberries & balsamic drizzle

raspberry honey | mascarpone | heavy cream | strawberries | balsamic

for the drizzle:
Stir together equal amounts of balsamic & honey in a small saucepan. Cook over medium heat until it coats the back of a spoon, set aside.

Place mascarpone in a bowl stir in a bit of the cream to lighten, then fold in some of the honey…not to much, you just want to lightly sweeten it. Hull and slice the strawberries and toss with a bit of honey…just enough to make them shiny and start their juices flowing.

to serve:
P
lace a large spoon full of the mascarpone in a martini glass. top with some of the strawberries and drizzle with the honey-balsamic.
